A1321 - Acetolactate decarboxylase from Bacillus licheniformis (gene donor: Brevibacillus brevis) for use as a processing aid

This application seeks to permit the use of the enzyme acetolactate decarboxylase as a processing aid, to reduce the formation of diacetyl during yeast fermentation in the manufacture of beer, wine and other yeast fermented beverages.

This application is being assessed under FSANZ’s general procedure and will include one round of public consultation. The current call for submissions will run from 14 July to 25 August 2026.
