Most of our dietary exposure to nitrates and nitrites is through fruit and vegetables. Eating fruit and vegetables is widely recommended due to the strong evidence of beneficial health effects against a range of diseases. Nitrates and nitrites have also been used as food additives in cured meats and some cheeses for many years, primarily to prevent the growth of Clostridium botulinum. Adding nitrites or nitrates improves the microbiological safety of these foods and extends their safe shelf life. Survey of tinned fruits for tin, lead and arsenic (December 2015) In 2015 Food Standards Australia New Zealand (FSANZ) tested canned and bottled fruit products following reports of high levels of metals in some products. The reports, indicated that some cans of imported peaches had levels of lead and tin that were not compliant with Australian food standards. FSANZ's survey, conducted by an independent laboratory on domestic and imported products, found very small amounts of lead and tin in all products tested. The levels found were all below maximum levels permitted in the Food Standards Code. Arsenic was not found in any products. Overall, there were no public health and safety or compliance issues. Arsenic (January 2020) Arsenic is a chemical element found in water, air, food and soil as a naturally occurring substance or due to contamination from human activity. Arsenic occurs in organic and inorganic forms. The organic forms are of relatively low toxicity while the inorganic forms present a greater hazard. Both forms of arsenic appear naturally in soil and ground water and as such, their presence (in extremely low levels) in foods is unavoidable. Tagatose is a novel food that has been approved by Food Standards Australia New Zealand (FSANZ). Tagatose is very similar in chemical structure to fructose and has similar properties to traditional sugars (e.g. is sweet tasting and has similar cooking properties) but unlike most other sugars it is only partially absorbed by the gastrointestinal tract.
