This application seeks to permit pectinesterase from a genetically
modified strain of Aspergillus oryzae
containing the pectinesterase gene from Aspergillus
tubingensis, as a processing aid in the manufacture of fruit and vegetable
juices/products, coffee processing, flavouring production and wine production.
