A1136 – Protein Glutaminase as a Processing Aid (Enzyme)

​The purpose of the Application is to permit the use of protein-glutaminase from Chryseobacterium proteolyticum as a processing aid to improve protein functionality in baking, noodle, dairy, meat, fish and yeast products.
