Primary Production and Processing Standard for Eggs

Work on the development of a Primary Production and Processing standard for the egg industry commenced in April 2006 with the establishment of a Standard Development Committe

In December 2006, in consultation with the Standard Development Committee, FSANZ released an Initial Assessment Report for a first round of public comment. This report contains an overview of the egg and egg products industry, a discussion of possible hazards associated with eggs and existing measures in place to manage food safety (detailed in Fact Sheet 4)

A detailed scientific risk assessment of the potential chemical and microbiological hazards associated with the production and processing of eggs and egg products was completed in January 2008 as part of the risk analysis process. This report will be made available to the public at Draft Assessment stage.

FSANZ will continue to progress the standard through the Draft Assessment stage, which involves the development of control measures to include in a draft standard.   A report on the Draft Assessment stage, including the risk assessment report and draft of the standard, will be publically available as part of a second round of public consultation in mid 2009.
